A few years ago I was looking for a way to use garlic scapes and I came up with an amazing recipe!

After sharing with family and friends and experimenting with this delicious condiment on pasta, roasted vegetables, egg dishes, and more, I was encouraged to make it for my customers as well. I have sampled it out at festivals and at Mill City Farmers Market, and if people like garlic they just love this pesto!

We create Escape! Garlic Scape Pesto at a commercial kitchen, and our process and facility is state inspected.  In 2020 we made 818 jars of pesto at the Kenyon VFW kitchen, in 2 days!

Escape! Garlic Scape Pesto is gluten-free and nut-free, using organic pumpkin seeds instead of a traditional pesto’s pine nuts.

Ingredients include: organic olive oil, organic garlic scapes, organic pumpkin seeds, organic lemon juice, Pecorino Romano cheese (pasteurized sheep’s milk, culture, salt, enzymes), organic basil, salt, organic pepper

What is a garlic scape exactly?

A garlic scape is the “false” seed-head that stiff neck varieties of garlic produce in June each year. Most garlic growers cut off the scapes to encourage the plant to send its energy to the bulb rather than the seedhead. This helps produce a larger bulb.

Although scapes are delicious (they taste like very mild, crunchy garlic) and purchased by customers at farmers market and the food co-op, most garlic farmers struggle to find an outlet for all of their scapes. Thus many scapes end up on the compost pile at the farm. This product is a very tasty way to provide more value to my farm and to other local organic garlic farmers.
